Quick Post

So this is going to have to be really quick because my dad and I are going to the shooting range.  I had two sliders for lunch from the leftovers of last night - I put some chopped green peppers on top too; it added a new freshness but is not needed.
Remember how I said I messed up big time on a cookie recipe yesterday?  Okay well, since I didn't want to waste the blogs of melted applesauce but mostly chocolate, I froze it.  It has been sitting over night, and I took it out to take a bite... It was the best thing ever!  It tasted and had the texture of fudge!  Sweet, chocolaty, smooth, and creamy, it also was nutty.  Very good.

Messed-Up Vegan "Fudge"
1/2 Vegan Butter
Maybe a cup Unsweetened Applesauce
1 cup Vegan Chocolate Chips
1/8 cup brown sugar
1/2 tsp vanilla extract
1/2 - 1 cup Unbleached All-Purpose Flour
1/2 tsp baking soda
1/8 cup sugar
1/2 tsp salt
3 tablespoons water...

Preheat Oven to 375
Use a non-stick baking sheet

With a food processor, "whip" the water and applesauce

In a large bowl, cream butter, sugar, brown sugar, and vanilla

Add the applesauce-mixture in the large bowl and thoroughly combine

In small, very small bowl, mix the remaining dry ingredients except chocolate chips.

Gradually beat the flour mixture into the wet mixture until it begins to form a dough - leave a little watery

When it is almost thoroughly combined, add chocolate chips

Bake for 8 - 10 minutes

Let most of the watery-drippings drain off the sheet and into a sink
Let cool a little
Then put in a container and freeze

"4 1/2 teaspoons Ener-G Egg Substitute
6 Tbls water
1 cup Vegan Butter
3/4 cup Sugar
3/4 light brown sugar
2 tsp Vanilla Extract
2 1/4 unbleached all-purpose flour
1 tsp baking soda
1 tsp salt
2 cups semi-sweet Vegan Chocolate Chips

Preheat over 375
In the food processor whip the Ener-G Egg Substitute and Water until creamy.
In a large bowl, cream butter, vanilla, sugar, and brown sugar.
Add the egg replacer mixture to this wet one and thoroughly combine.
In a separate bowl, combine remaining dry ingredients except chocolate chips.
After, gradually beat the flour mixture into the wet mixture until it begins to form a dough.
When it is almost thoroughly combined, add chocolate chips.
Bake for 8-10 minutes or until golden brown
Let stand for 2 minutes; move to wire rack to cool completely."
